Menu Swap: June 16th

Gluten Free Menu Swap Monday
I’m going to keep this short and sweet since I’m tired and feeling quite ill. I’m surprised that I actually decided to do a menu swap this week since it’s going to be discombobulated to the extremes. I’ll try to keep to my menu as close as possible since I do think it will all flow harmoniously. Phil’s also coming this weekend because my birthday is this Saturday coming. I will finally be 20 and no longer a ‘teen’ number. It’s not that big of a deal though; in fact, he’s making a bigger issue of it than I.

This menu is rather simple. Again a lot of my lunches are pre-made salads due to the fact that I shall now be taking my grandmother to the hospital for her radium treatments. I just hope that the physician office will call tomorrow to state when she’ll begin her regiment. I hate doctors or my loathe is growing feverishly. At times, they seem like godsends while the other they’re quite incompetent.


Well enough ranting. This week’s GF swap is hosted by Natalie at Gluten Free Mommy, featuring oregano as the ingredient. I’m not that fond of oregano so to me a little goes a long way, indicating its occasional appearance in my recipes. And finally, Saturday is the day I dine upon meat after three years of being vegetarian, one pescetarian.


Monday - African
Lunch - Abidjan Cabbage Salad
Dinner - Groundnut Stew


Tuesday - Turkish
Lunch - Chickpea Salad with Dukkah
Dinner - Domatesli Tavuk Sote (Mock Chicken-Tomato Saute) with asparagus mushroom salad


Wednesday - Latin American
Lunch - Moros y Cristianos (Cuban Black Beans & rice) w/\ith fried plantains
Dinner - Tortilla de Patata with Catalan Spinach


Thursday - Creole/Cajun
Lunch - Louisiana Sunburst Salad, my way
Dinner - Appetizer: Spicy Crab Dip & veggies; Main Course: Shrimp Creole


Friday - Scandinavian
Lunch - Italiensk Salad
Dinner - Honey-Mustard Marinated Salmon with celeriac-cauliflower gratin and boiled potatoes.

Saturday - Italian
Dinner - Chicken Pizzaola with Spinach Risotto.
He cooks - gasp!

Okay, I like the fact that you are having Scandinavian food. My husband is from Denmark. ;-)

Asparagus Thin Focus
