Menu Swap: June 2nd

When my father first informed me that I wasn’t of German origins, I was slightly disappointed. I thought for the longest while that I was born to feast upon potatoes, cabbage and pretzels because it was in my genes - but I was wrong. Well, by a mere slight amount. Apparently, I’m Scandinavian. So I thought and thought and thought and the only question that popped into my head was, “What the heck is in Scandinavia?” A lot of fish, I’ll tell you right now. It isn’t that far from the cuisine of Germany as they depend on starchy root vegetables and potatoes. Scandinavia (Denmark rather) is also the founder of the smorgasbord A.K.A the tapas of Northern Europe.
I was content knowing that Scandinavian flavors teased me, urging for me to try them out. Flavors of berries and fruit are often combined with the main protein source with a vegetable of some sort. These combinations intrigued me so much that I had to devout a near week to experiment with herbs and accents of European cuisine. After all, I don’t visit the convenient that often so due to convenience sake, I did. Ironically enough Natalie from Gluten Free Mommy, chose cabbage for the veggie of the week. She just haad to do it.
I also have a big decision to make. It’s not really that big but its important. After giving it much thought, I’m considering to revamp my diet as in eating meat again. I rather follow a Mediterranean diet on my behalf and partly my boyfriend’s. I’m just getting tired of my limitations of tofu, beans and fish. After I began eating fish, I’m no longer a vegetarian anyway so what’s the problem with going all the way? Outsider provoking/opinionating is much appreciated.
Menu Swap for June 2nd
Monday: Moroccan
Breakfast - Teff Porridge w/ peanuts and banana flowers
Lunch - Zahlouk (Eggplant Salad) with labneh
Dinner - Marrakesh Curry with millet
Tuesday: Scandinavian
Breakfast - Pyttipanna (Swedish Hash)
Lunch - Apple Mushroom Sandwich with tomato salad
Dinner - Salt Baked Salmon with pickled pumpkin and sautéed cabbage
Wednesday (Hospital appointment, take along lunch): Cajun/Creole
Lunch - Black Eyed Pea Salad
Dinner - Crabcakes with roasted asparagus and smashed sweet potato
Thursday (School Exam, take along lunch): Japanese
Lunch - Bento [Bittergourd stirfry with shrimp toast & pickled plums)
Dinner - Korokke with Kurigohan (chestnut rice), miso soup, & ponzu dressed cabbage salad
Friday: French
Lunch - Salade de Pomme
Dinner - Tofu au Vin with quinoa Provencal
Hopefully nothing will change…hopefully.
