Menu Swap: November 10th

I’m a little apprehensive for the upcoming week.

Much ranting, be warned.

I finally got my test results back from the doctor here who stated, in fact, I have celiac’s disease, not just an intolerance. I have to get a secondary blood test to confirm his diagnosis and the much excited endosocpy/intestinal biopsy. I’m freaked out of my mind and trying to stay cool is appearing to be more than a little bit of an effort. On top of that, my knees aren’t getting any better; I do believed I pulled tendons or ligaments around or behind my knee caps when I last ran in the morning because nearly 24-7, I’m in pain. The fact that I can’t take any pain relievers because of my upcoming endoscopy is killing me! And that I can’t take any digestive enzymes nor multis nor supplements or fiber - which is already taking its toll and, again, I’m not happy. I already missed half a week of work from the flu meaning my pay is shot and this week doesn’t appear to be accommodating to my sudden endoscopy. If I knew I was going to have it upped this soon, since my first appointment was the 30th of December, I would have given them much prior warning. When my results came back positive, the doctor wanted to do the examination immediately - and that also has me freaked.

Aside from this, I’m not sure how sore my throat will be since its still raw from my previous cold confrontation plus and it is said to experience a sore throat afterwards. That’s really great news for someone who works by speaking on the phone for 6 to 8 hours at a time. Oh, yeah, wonderful.

On a lighter note - a much lighter one - Cheryl chose Pomegranates for the ingredient of the week. I never had a Pom-Pom before so this will be something new. Again, most of my food needs to be soft for the week and the juice of pomegranates are supposed to be utterly delicious in addition to the seeds being easy to digest. I’m short on cash, but, I’m trying to pull together a decent menu in hopes that it will work out right. I think it will. The crock pot will surface once again and I’m going to prep like a sues chef during hours before a major function.

Thanksgiving is coming up faster than anticipated and the list for my recipes is ever so growing! I can’t wait to start and let my new family taste gluten free versions of dishes my mom used to make. I’m so looking forward to her stuffing!! And pork. There’s going to be PORK. I haven’t had pork in months and I’m ready for some pork. Other notable mentions, the gluten free seitan WORKED. Still needs additional testing but so far, its very stress apt. And our date is announced - some time the wedding will take place next November and I have all intentions of baking my own cake, which was decided on last night..for the moment

I hope you feel better soon. BUT it does sound like you have awesome news! Congrats on setting a date! Yay, for you! That is so exciting!

tumeric, ginger, glucosamine, arnica ointment are a few ideas, but the best is Tiger Balm. It has a smell like you wouldn't believe, but it is worth it. I always keep some on hand as I spent my teenage years sufferent from constant knee dislocations and inflammations whenever it rained...and that was often as I grew up in Vancouver. I hope that you feel better soon Manda, but I'm glad that your finally getting some answers. Keep us posted!
