We are SO meant to be together. But in all fairness, I'm totally ignoring him as I'm updating my blog and he didn't mean it. I got my stomach rub after Star Wars.Manda: -Updating Blog- Look! Isn't it pretty?

The reason for my lack of recipe updates is due to me being at Phillip's apartment in Arlington where I have no method to upload my pictures so they'll have to wait until I get back home. This past week I've participated in a lot of self experimentation and, of course am suffering from it stupidly. One fact that I've become more and more aware of is the lactose-free casein-free alternative dairy - wait, what? Yep.
According to numerous allergy-free cookbooks, nutrition articles, and reports, those suffering from a lactose intolerance may be able to digest goat's milk. The reason being is that goat's milk is more easily absorbed than cow's milk, minimizing the undigested bacteria that would lead to the usual unpleasant symptoms of lactose intolerance. If the individual is also casein-allergic, goat milk is also absent of the protein. Other attributes of goat's milk that aid in its digestibility are the the smaller sized fat globules and the general structure of its fatty acids. This, however, is all a theory and speculation and may not work for every individual. I have yet to try it for myself but if this means goat's cheese then bring on the liverwurst, goat cheese, and sauerkraut sandwiches baby! I finally found my brand of sauerkraut..hua..
In other news, I changed my major which shall better benefit my intended career and am now aiming for a bachelor's degree in Holistic Health. I am so excited because then I can specialize in allergy health as a dietitian. I also was assigned the task to cater a gluten free birthday party and to make a slew of gluten free goodies. Wee~! Fun stuff! Now I just need another job and I'm all set but for now - the 'ingredient' for the week, soup.
A Campbell's Soup Commercial from Malaysia
Cheryl at Gluten Free Goodness has chosen one of my controversial culinary categories. I hate soup and as irony would have it, I received a 400 recipe book of soup that I cursed out several times. I just..I don't like soup. It's too thin, too liquid, and I'm never satisfied after indulging in a bowl of thin flavored liquid. If I want a 'soup', I crave something large, thick, and chunky which would be classified as a stew. Therefore, I prefer stew over soup except for tomato since tomato stew doesn't really sound right and I always make mine thick and chunky.
And now, besides my desire to ride a flying mushroom, here is the menu for the week with a few forced soup recipes in honor of Cheryl.

Hey Manda,
I love the new layout. sorry soup doesn't do it for you, stews are perfectly welcome! have a great week
Hey There!
Like the new layout. Just wanted to drop in because I noticed that you mentioned goat's milk as an alternative to cow's milk. Are you sure that goat's milk is casein free? I've been trying to go casein free too and I thought goat's milk was on the unsafe list. I do know that some people can tolerate it better than cow's milk, especially if it's a lactose issue, but I'm not sure if it's casein free or not.
I like the new layout! And your menu for this week looks great. The red bean soup is definitely interesting. And congrats on getting to cater a gf birthday party, that should be fun!
Hey Manda,
Love the new look. Do you happen to have a mulligatawny soup recipe that you would be willing to share? I love mulligatawny, but have yet to find a recipe that I like. Also, congrats on the catering. I was just asked this weekend if I would be willing to bake loaves of bread to sell and I'm seriously thinking of doing it, I would just have to find the time...
Have a great week! Oh, and I haven't had any problems with goats cheese and I definitely have dairy issues (just discovered this).
The black is back and the layout looks great! Want to work on mine? Good luck with goat cheese, milk and butters!
