Menu Swap: February 2nd






I can’t say that I’m a football fan nor a sports fan in general but I find the commercials hysterical and I love making themed food and decorating so the Superbowl gave me a chance to make football themed cupcakes! And of course, upon the request of my beloved, the infamous 7 layer dip - made healthier unbeknownst to him, muahaha. Normally, Mexican 7 layer dip is refried beans, guacamole, sour cream, etc - but my layers were:

1st/Base: Tomatillo Salsa (2/3 cup)
2nd - Cooked Ground Taco Seasoned Turkey (½ lb)
3rd - Guacamole (½ cup)
4th - All Natural Sour Cream (½ small container)
5th - 2/3 cup homemade salsa or your favorite
6th - Low fat Mexican shredded cheese
7th - Olives and cilantro

Vegans and vegetarians can substitute the ground meat with ground tofu, tempeh, or beans. Even fish would be good; I’d suggest tuna or another ‘meaty‘ fish. The cupcakes in the picture are basic vanilla cupcakes, just decorated with chocolate and colored vanilla butter cream icing. There’s nothing special about it. So all in all it was a great Superbowl dinner for the guys, even though their favorite team (Redskins) weren’t playing.

The ingredient, chosen by Cheryl, is pineapple. I have to admit, I’m not a huge pineapple fan (one reason is because I find it hard to digest) but I don’t mind it on occasion. Being that I hadn’t eaten pineapple in a while, and it being the ‘chosen one’ for the week, it’s a nice change and will allow me to experiment with it some in food which is always, always fun.

Oh and best news of the week: I got my certificate of completion for the first course of my cake decorating class - yay!
