Another wonderful resolution dawned on me moments ago - my wedding march song. I don’t particularly like the traditional “Here Comes the Bride” for many reasons. It has no significance and lacks a true meaning. I wanted a song that has something, connects to something within me, and that happens to be this song: The Prayer.
My grandmother had always adored Adrea Bocelli and the fact that she can no longer be with me, that she’s watching me from above and through the eyes of other people…its perfection. I’m also being lead to a place where I’m safe - into a everlasting bond with Phillip. Now the only problem is that I’m going to be hysterical over this song because it always made me cry is another story. I just have to keep recalling that its from one of my favorite films and that there is a double headed dragon with two split personalities in the film. Hopefully, I won’t make my makeup run. My departure song should be the Ewok celebration song.
But now to a more cheerful topic, food. The ingredient for the week is nuts, chosen by Sea at the Book of Yum. Who isn’t nuts about nuts? Nuts are a fabulous source of healthy fats and protein. A single serving of nuts per day is stated to reduce the risk of heart disease and control hunger pangs for the snacky cravings. Nuts also contain bounds of fiber, phytonutrients, and antioxidants. But before you binge upon a pound of nuts, look at all the nutritional information. According to several sites (body.ecology.com; integraloptions.com), the top six healthiest nuts are as followed: walnuts, almonds, cashews, pecans, brazil nuts, and macadamia nuts. According to BodyEcology, “Peanuts are susceptible to a fungus that generates poisons called aflatoxins. Aflatoxins can cause liver damage, so many people avoid peanuts and peanut products unless they know the source keeps the peanuts fresh and free from fungi”. Not only that but many people find themselves allergic to peanuts so they tend to opt for soynut butter or sunbutter.
Another key fact, as with everything and anything is that moderation is the key to weight control. Nuts are hefty in calories to keep an eye on the serving sizes!

I'm not a big fan of "Here Comes the Bride" either but I still manage to cry everytime I hear it. lol

Your menu sounds delish this week! What is Estonian ruby salad? In my mind it is made with tiny cubes of beet that glow like jewels, but I could be way off!
