Menu Swap: February 22nd

I never thought twice about the radish until recently. Last week, after suffering from tremendous exhaustion, persistent dizzy spells, and a slew of other symptoms, I took a test and found out that I have adrenal fatigue syndrome; a common secondary ailment of celiac’s disease. I have to now resort to a low GI diet or try to follow it as best as possible, but, it isn’t easy because pretty much of what I eat is more on the GI side of the equation. I’m doing a balancing act, juggling food combinations and taking extra supplements to do as well as I can without getting the sensation that I’m restricted. I’ve already cried my share, so, I’m done feeling sorry for myself. The new way of living is what should be in the first place, as I have to eliminate artificial sweeteners which are bad for you anyway and caffeine in large dosages. So, bye bye coffee, hello chai~ So after looking at a list of foods that I should eat more of, the radish caught my attention. Of course, you poor neglected root, how could I have forgotten thee?

Radishes can be eaten raw or cooked and definitely delicious roasted. They are low in calories, high in nutrients, and come in a variety of forms. Most of you have seen either the little red bulbs, long white ones, the Asian daikon and maybe, if you’re lucky, you can see the black radish. I saw one a while back and it just looked so awesome. It was expensive for a little thing, but awesome. The daikon and its Korean sibling (the short fat version) are great just braised. The texture of a braised daikon simply melts on your tongue like butter. It is remarkable.

Thanks for hosting this week. I've never roasted radishes, but that Roasted Radish and Brussels Sprouts Salad sounds wonderful. And I can't wait to hear about the Taz High Energy Soup. I'd love to make it for myself, just so I can keep up with my kids.

I don't have radish in it this week, except it is something we use often on salads. I do like to make a refrigerator pickle with them in the summer after we harvest them from the garden. Yum!

ooh, I forgot about daikon! I was thinking of those little red ones and I never liked those. I will try to pick up some daikon, they work perfectly in a star anise stew.
